Cashew Broccoli

I may have lucked out when I found a really good recipe for broccoli tonight. My daughter LOVES broccoli and while it’s not my favorite, I’ll eat it. I actually have always loved eating it restaurants because usually they season it in a way that I like. I’ve yet to find a way to make it at home without it just being PLAIN.

UNTIL NOW!

So I want to share with you a stupid-easy recipe for a sauce you can make to pour over your veggies. In fact, I’m sure any veggies will do, it doesn’t have to be broccoli.

Ingredients

1 – 1.5 heads of broccoli, cut into florets

3 Tbsp reduced sodium soy sauce

1 Tbsp brown sugar

1/3 cup butter 

2 tsp white vinegar (we used apple cider vinegar)

2 cloves garlic, minced

1/4 tsp ground black pepper

1/3 cup raw cashews

Directions

Place broccoli into a large pot with about 1 inch of water in the bottom. Bring to a boil and cook for 7 minutes or until tender. Drain and arrange broccoli in a bowl or on a serving platter.

While broccoli is cooking, melt butter in a small skillet over medium heat. Mix in the brown sugar, soy sauce, vinegar, pepper and garlic. Bring to a boil, then remove from heat. Mix in the cashews and pour sauce over broccoli. Serve immediately.
