Cilantro Lime Crockpot Chicken

When my friend Kim posted she was making this on Facebook yesterday, I said to myself, “I need that for dinner. Like. TODAY.” I mean look at it? Doesn’t it just make your mouth water??? I’m drooling looking at it all over again…

So off I went to Sprouts, our local farmer’s market grocery store (any Sprouts fans out there?) to get all the ingredients. What I love about this recipe is that it’s completely flexible and easy and since it’s a crockpot recipe you simply throw it all in together and push a button. Even how you serve it gives you flexibility!


3 chicken breasts, fat trimmed

1 can black beans, do not drain

1 package of frozen corn

2 garlic cloves, minced

1 lime – use the juice

1 tsp of cumin

Cilantro, salt & pepper to taste


Spray your crockpot with cooking spray. Add chicken first. Then everything else on top. Squeeze the juice out of the entire lime and pour over. Cook on low for 6-8 hours. We cooked for 7 hours and it turned out perfect.

Definitely save some cilantro to sprinkle on top when you serve it. You can serve over tortillas or rice. You can add cheese, avocado or pico de gallo after cooking as well. So many options!!


Highly recommend! You’ll have a lot leftover if you only have two people eating it like I did. I have no qualms eating it for lunch the next couple of days, though! DELISH!
