Last week as we were grocery shopping, my eyes went directly to these beauties…
I mean look how gorgeous the colors are! I was like, “Jim, we gotta make something with these peppers!” So he had a great idea – chicken fajita quesadillas! He’d seen this recipe somewhere and wanted to try it!
First we made the seasoning for the chicken with the 21 Day Fix smoky southwestern seasoning.
Recipe as follows:
1 Tbsp chili powder
2 tsp ground cumin
1 tsp coriander
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp dried oregano
1/2 tsp smoked paprika
1 tsp sea salt
NEXT, we trimmed the fat on the chicken and cut into strips and placed into a bowl.
Had to cut all the veggies as well. Peppers and onions!!
*3 chicken breasts, cut into strips
*1 medium onion, sliced into chunks
*1 red, 1 orange, 1 yellow pepper sliced into strips
*1 lime, cut in half
*21 Day Fix smoky southwestern seasoning
Pour seasoning over chicken in bowl and toss until chicken is completely coated on all sides. Heat olive oil in skillet on medium heat and pour in chicken. Cook until done.
Add more olive oil to pan (do not clean in between) and add onions first. A few minutes later, add the peppers. Squeeze both lime halves and cook several minutes until tender, but still crisp.
When you’re done, you can serve them in so many different ways! You don’t HAVE to serve as a quesadilla. Although Jim loved his – falling apart and everything…
You can serve over rice. Or in a tortilla. Or alone. Add avocado, cheese, cilantro, pico de gallo, the possibilities are endless! The chicken was incredibly juicy and so delicious! The veggies were slightly seasoned as well since they were cooked in the same pan as the chicken. Highly recommend you try these out!!
